Badam Pisin or Badam-Puskar is a type of pistachio in India available in salted and unsalted varieties. It is made from toasted, skinned, ground seeds of almond with rice, jaggery, and salt mixed with water to form a paste. The skin left behind is used for cooking and can be eaten. The almonds are boiled in water to make a thick syrup; the syrup is strained 12 times through cylindrical perforated metal sheets, woven into small pieces, and dried in sun-dried rooms. The roasting process increases the natural oil content by 20% to 30%.

History of the product

Badam Pisin evolved from a combination of the Sanskrit words Bharati and sindurthi in 1801. Today, Badam Pisin comprises ground-shelled almonds, saffron, cardamom powder, black salt, fennel seeds, water, and ghee. In Hindi, badam means almond, and pisin refers to thin icing or icing. Badam Pisin has long been consumed in Ayurveda due to its flavour, described as “metallic” yet sprightly with notes of honey and nutmeg on the tongue.
